Recipe: Rose Lassi

If you’ve been following along, you all know that I recently made a purchase of a rather large quantity (by accident) of culinary dried rose petals. I’ve been using it in just about everything. I did want to try this one drink that reminded me of my childhood. This lassi that I made with a simple syrup of rose petals has just 3 ingredients. It is so simple, organic, and elegant you’ll be able to whip it up in no time when you have unexpected guests over. And the best part is that if you have any of that rose simple syrup left, use it in a cocktail! For cocktail ideas, try a rose-gin spritz! Cheers 🙂 How to make this lassi.

1. Make a simple syrup infused with rose petals. Boil 1 cup water to 1 cup sugar. Remove from heat. Add 4 tablespoons dried food-grade rose petals. Cover and steep for 30 minutes. Strain into a container and set aside.

2. For the lassi, whisk 1.5 cups plain yogurt (I use organic low fat, but any kind will do. Don’t bother with Greek yogurt as you’re going to be adding water to this). Add 1/2 cup to 1 cup of water to get the consistency of the lassi to your liking. I prefer mine on the thin side (resembling “moru” which is a similar drink to lassi that we drink in Tamil Nadu in the South of India). Once whisked, pour over some ice in a glass. Drizzle approximately 1 to 2 teaspoons of rose syrup to your lassi. Top each glass with some rose petals and give it a good stir. Enjoy!
