In fact, I design my weekly meals around TJ’s availability. One of TJ’s standouts is their pastrami-style smoked salmon, which i’ve been obsessing over for quite some time. Yesterday in an effort to clear out the fridge to make room for this Sunday’s superbowl fixins, I was forced to make a sandwich with what was left in my fridge. Never have leftovers created something so magical! So here it is! The best smoked salmon sandwich you’ll ever eat!

Ingredients:

2 slices of wholegrain seeded bread (from TJ)

4 thin slices of pastrami-style smoked salmon

2 tablespoons creamy goat cheese (from TJ, but if you can’t find it, just mix regular goat cheese with some cream cheese to make it spreadable)

1/2 small avocado

a handful of greens (I use TJ’s Power to the Greens)

a sprinkling of TJ’s “Everything But The Bagel” seasoning blend

1 tablespoons capers

pepper to taste

 

Method:

Toast the two slices of bread. Spread a thin layer of the creamy goat cheese and mash 1/4 avocado on each slide of bread. Add a handful of greens followed by a sprinkling of the seasoning blend. Top the open-faced sandwich with the salmon and finally add capers over it. The capers and salmon have enough salt, so I just add freshly ground pepper over the sandwiches. They’re not ready to devour!
